About Us

Scherf’s Processing was established by Tom Scherf in 1991.  Originally, Scherf’s processing consisted of a small shop offering custom processing ONLY for pork, lamb, beef and venison.  Over the years, Tom expanded his business with a new, larger facility now offering slaughtering, custom processing, smoking, and curing of pork, venison, lamb, and beef.  Scherf’s Processing has recently been purchased by Corey and Christina Herzing of Freeburg.  Corey, along side Tom Scherf, will work to deliver quality workmanship for all your custom processing needs.
